Vegetable Quiche

This dish can be served as a warm starter or as a main meal, it can also be prepared with other types of vegetables or cheese.
Ingredients
- For the pastry:
- 175g of plain flour
- 70g of unsalted butter
- For the filling:
- Crème fraîche (220ml)
- 2 Leeks
- 1 onion
- 1 red pepper
- 200g of Swiss cheese
- Salt and pepper
- 3 eggs
Preparation
- Pastry:
- Sift the flour and the butter sliced in cubes together in a large recipient.
- Add 2 or 3 table spoons of water
- Mix it all together with your hands until it becomes a firm dough
- Add water if necessary (not too much)
- Let it rest in the fridge for about 30 minutes
- Preheat the oven at 200°C
- On a buttered flan dish, place the pastry and cook in the oven for 5-10 min
- Vegetables:
- In a frying pan, cook gently the vegetables for about 15 min
- Filling:
- In a bowl, mix the eggs and the sour cream
- Add salt and pepper to your liking
Now that the base of the pastry is precooked, add the vegetables into it. Pour the egg and cream mix and finally, place cubes of Swiss cheese on top of the filling. Cook in the oven at 200°C for 20-30 min.
Serve with a side salad and balsamic vinegar… Enjoy.
