Vegetable Gratin
Serving : 2-4 People
Ingredients
- Courgettes, eggplant or marrow (equivalent of 4 courgettes)
- 4 good size tomatoes
- 5oz (150g) of Swiss or cheddar cheese
- 1oz of grated parmesan cheese
- Olive oil
- Garlic
- Salt and pepper
Preparation
- Wash and cut in slices the vegetables
- In a pan with a tablespoon of olive oil, cook slowly the vegetables with the garlic
- Arrange the tomatoes, cheese and cooked vegetables in layers in a gratin dish
- Sprinkle the top with parmesan cheese
- Bake in the oven for about 30mins and serve
