Vegetable Gratin

Vegetable GratinServing : 2-4 People

Ingredients

  • Courgettes, eggplant or marrow (equivalent of 4 courgettes)
  • 4 good size tomatoes
  • 5oz (150g) of Swiss or cheddar cheese
  • 1oz of grated parmesan cheese
  • Olive oil
  • Garlic
  • Salt and pepper

Preparation

  • Wash and cut in slices the vegetables
  • In a pan with a tablespoon of olive oil, cook slowly the vegetables with the garlic
  • Arrange the tomatoes, cheese and cooked vegetables in layers in a gratin dish
  • Sprinkle the top with parmesan cheese
  • Bake in the oven for about 30mins and serve
